Raw Wild Honey

Honey has some unique properties that provide health benefits beyond its delicious taste and sweetening capacity. The oligosaccharides in honey have been suggested to promote the growth of beneficial bifidobacteria in the colon. This colonization may be useful following diarrhea or an extended use of antibiotics.

Honey is also rich in health-promoting antioxidants such as pinocembrin and pinobanksin.
The antioxidant content does vary depending upon the floral source and correlates with color....Of interest to the person with type II diabetes, the use of honey produces a smaller blood glucose and insulin response than similar amounts of carbohydrate from sucrose. Since honey contains large amounts of fructose it tends to be sweeter (depending upon the temperature) than regular sugar, so that less may be used.

Honey is the epitome of a summer food, redolent of flowers and golden, sun-filled days. Add some sweetness to your life - and your cooking - with this delectable food.

Honey is an organic, natural sugar alternative with no additives that is easy on the stomach, adapts to all cooking processes, and has an indefinite shelf-life.

Its name comes from the English hunig, and it was the first and most widespread sweetener used by man. Legend has it that Cupid dipped his love arrows in honey before aiming at unsuspecting lovers.

In the Old Testament of the Bible, Israel was often referred to as "the land of milk and honey."
Mead, an alcoholic drink made from honey was called "nectar of the gods," high praise indeed.

Honey was valued highly and often used as a form of currency, tribute, or offering. In the 11th century A.D., German peasants paid their feudal lords in honey and beeswax.

Although experts argue whether the honeybee is native to the Americas, conquering Spaniards in 1600 A.D. found native Mexicans and Central Americans had already developed beekeeping methods to produce honey.

Many honey fans replace the sugar in their diet entirely with honey.

Cooking with honey differs from cooking with sugar, though, so recipes will generally have to be adjusted accordingly.

For example, honey is hygroscopic, which means it absorbs moisture. Replacing sugar with honey in your baking will therefore result in cakes that remain moist for longer.

As honey tastes ‘sweeter’ than sugar does, the general advice is to use one quantity of honey to replace one-and-one-quarter quantities of sugar.

Honey is delicious in marinades for meats such as pork chops, chicken or duck, but you need to be careful once it goes in the oven because honey burns relatively quickly. One tip is to wipe off the marinade and pour it onto the food half-way through cooking to get a beautifully lacquered finish.

Honey has an affinity with milk products. As well as putting it on your breakfast yoghurt, do as the Italians do and drizzle honey over thin slices of cheese as a deliciously sweet-and-salty end to a meal.w
